A refreshing twist on the classic margarita, these Strawberry Rhubarb Margaritas with Mint Lime Ice are bursting with fruity flavors and a hint of minty freshness. Perfect for warm weather gatherings or simply unwinding after a long day.
Ingredients:
- 1 cup strawberries, hulled and sliced
- 1 cup rhubarb, chopped
- 1/2 cup water
- 1/2 cup granulated sugar
- 1/4 cup fresh mint leaves, packed
- 1/2 cup freshly squeezed lime juice
- 1/2 cup silver tequila
- 1/4 cup triple sec
- Ice cubes
Instructions:
Put strawberries, rhubarb, water, and sugar in a saucepan
Over medium-low heat, bring to a simmer and cook for about 10 minutes, until the rhubarb is soft
Take it off the heat and let it cool down all the way
Put mint leaves and lime juice in a blender
Mix the mint until it is very small pieces
Use a fine-mesh sieve to strain the mint-lime mixture into a bowl
Press down on the solids to get all the liquid out
Put the tequila, triple sec, mint-lime mixture, and cooled strawberry-rhubarb mixture in a pitcher
Mix things together well
Put ice cubes in each glass and then pour the margarita mix over the ice
If you want, you can add more mint leaves and lime slices as a garnish
