This easy slow cooker soup recipe has comforting flavors like creamy tortellini, tender chicken, and healthy spinach.
Ingredients:
- 1 lb boneless, skinless chicken breasts, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup milk
- 1 cup diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 9 oz refrigerated tortellini
- 3 cups fresh spinach leaves
- 1/2 cup grated Parmesan cheese
Instructions:
In a slow cooker, combine diced chicken, chopped onion, minced garlic, chicken broth, heavy cream, milk, diced tomatoes, dried basil, dried oregano, dried thyme, salt, and pepper
Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and flavors are well blended
About 30 minutes before serving, stir in refrigerated tortellini and fresh spinach leaves
Cover and cook on high for an additional 20-30 minutes, until tortellini is tender and heated through, and spinach is wilted
