These crispy smashed red potatoes are an easy and delicious side dish that pairs well with any meal. They're crispy on the outside, tender on the inside, and bursting with flavor.
Ingredients:
- 12 small red potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: chopped fresh herbs such as rosemary or thyme
Instructions:
Preheat oven to 425F 220C
Boil the red potatoes in a pot of salted water until fork-tender, about 15-20 minutes
Drain the potatoes and let them cool slightly
On a baking sheet, gently smash each potato using a fork or potato masher
Drizzle olive oil over the smashed potatoes and season with salt, pepper, and optional herbs
Bake in the preheated oven for 20-25 minutes, or until crispy and golden brown
