A hearty and filling beef and tomato soup with macaroni, perfect for a comforting meal on chilly days.
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can 28 oz crushed tomatoes
- 4 cups beef broth
- 1 cup elbow macaroni
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup frozen mixed vegetables
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped for garnish
Instructions:
Over medium-low heat, brown the ground beef in a large pot
Put in the minced garlic and chopped onion
Saut until the onion turns clear
Add the beef broth, elbow macaroni, oregano, basil, salt, and black pepper, and mix them all in
Bring to a boil, then lower the heat and let it simmer, stirring every now and then, until the macaroni is soft
Put in the frozen mixed vegetables and heat them up
