Kale Mushroom Cashew Stir Fry



This Kale Mushroom Cashew Stir Fry is a delicious and nutritious vegan dish that is quick and easy to make. Packed with flavors and textures, it's perfect for a quick weeknight dinner or a healthy lunch. The combination of hearty kale, meaty mushrooms, and crunchy cashews makes this stir fry satisfying and full of goodness.

Ingredients:

  • 200g kale, stems removed and chopped
  • 200g mushrooms, sliced
  • 1/2 cup cashews
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper, to taste

Instructions:

In a large skillet or wok, heat vegetable oil over medium-high heat

Add garlic and ginger, saut for 1-2 minutes until fragrant

Add mushrooms and cook until they release their juices and start to brown, about 5 minutes

Stir in kale and cook until wilted, about 3-4 minutes

Add soy sauce, maple syrup, and sesame oil

Stir well to combine

Toss in cashews and cook for another 2 minutes, until everything is heated through

Season with salt and pepper to taste

Serve hot and enjoy!
