Ingredients:
- 200g kale, stems removed and chopped
- 200g mushrooms, sliced
- 1/2 cup cashews
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
Instructions:
In a large skillet or wok, heat vegetable oil over medium-high heat
Add garlic and ginger, saut for 1-2 minutes until fragrant
Add mushrooms and cook until they release their juices and start to brown, about 5 minutes
Stir in kale and cook until wilted, about 3-4 minutes
Add soy sauce, maple syrup, and sesame oil
Stir well to combine
Toss in cashews and cook for another 2 minutes, until everything is heated through
