The right amount of beef, tomatoes, and macaroni make this soup hearty and comforting. Great for a warm meal on a cold day.
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can 14 oz diced tomatoes
- 1 can 8 oz tomato sauce
- 4 cups beef broth
- 1 cup elbow macaroni
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup frozen mixed vegetables
Instructions:
In a large pot, brown the ground beef over medium heat
Add diced onion and minced garlic, saut until onion is translucent
Stir in diced tomatoes, tomato sauce, and beef broth
Season with dried oregano, dried basil, salt, and pepper
Bring the soup to a boil, then reduce heat to low and simmer for 15 minutes
Add elbow macaroni and frozen mixed vegetables, simmer for an additional 10-12 minutes or until macaroni is tender
Adjust seasoning if needed and serve hot
