Lemon Blueberry Blender Muffins



It's very easy to make these Lemon Blueberry Blender Muffins. Just mix the things together, add the blueberries, and bake. They're soft, fluffy, and taste great with lemon and blueberry. Great for a quick and healthy snack or breakfast!

Ingredients:

  • 1 1/2 cups rolled oats
  • 1/2 cup Greek yogurt
  • 2 ripe bananas
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 lemon zest and juice
  • 1 cup fresh blueberries
  • 1/4 cup almond milk
  • 1/4 cup coconut oil
  • 1 tsp vanilla extract

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with paper liners

In a blender, combine the rolled oats, Greek yogurt, bananas, honey, eggs, baking powder, baking soda, salt, lemon zest, lemon juice, almond milk, coconut oil, and vanilla extract

Blend until smooth

Gently fold in the fresh blueberries into the batter using a spatula

Pour the batter into the prepared muffin tin, filling each cup about 2/3 full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean

Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
